Warm Kale Quinoa Salad

Kale is a hearty green that’s packed with nutrients that boost your health. I love to toss a fist-full of kale into my smoothies or into soups whenever I can. If you find it difficult to eat cold greens during the winter months, consider eating them warm. This Warm Kale Quinoa Salad has the perfect combination of protein, carbs and taste. Make it as a side to your next dinner or as an energizing lunch.
Ingredients:
- 1 cup raw kale, chopped into large pieces
- 1 cup cooked quinoa
- 2 cups cremini mushrooms, chopped
- 1/4 cup red onion, chopped
- 1/4 cup chick peas
- 2 tbsp goat feta cheese
- 1/4 cup roasted pecan bits
- 1 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1/4 tsp dried basil
- Juice of 1/2 lemon
- Salt and pepper
Make it:
- In a small pan, heat olive oil, sautéing onions, mushrooms, and chickpeas for 2 minutes.
- Stir in balsamic vinegar and basil, cooking mixture for 2 more minutes, covering the pan.
- In a bowl, mix quinoa, kale, goat feta, pecans, and sautéed mushrooms.
- Drizzle lemon juice over the mixture.
- Toss salad with tongs or two forks.
- Sprinkle with salt and pepper to taste. Enjoy!
