You can prepare this colourful, nutrition-packed dinner with plenty of time to spare so you can get onto other things. It provides plenty of clean energy for your active day. Feel free to substitute different vegetables according to what’s in your fridge. Get creative!
Clean Energy Cashew Veggie Stir Fry
Total Time: 25 minutes
Serves: 4
Ingredients:
- 8 oz. quinoa or whole wheat linguine noodles
- 1 lb. of vegetables* (carrots, broccoli, zucchini, peppers, red onion, celery, bean sprouts)
- 2-4 tablespoons of coconut oil
- 2 garlic cloves, crushed
- 1 tablespoon ground fresh ginger root
- ½ cup raw cashews
- 1-2 tablespoons miso
- low-sodium soy sauce
- freshly ground salt & black pepper
Make it:
- Bring a pot of lightly salted water to a boil. Add linguine noodles to cook for 6-8 minutes, or until al dente, or firm to the bite.
- Chop the vegetables in order of required cooking time. Carrots and zucchini should be cut into matchsticks.
- Heat a frying pan or wok with coconut oil.
- When the pan is hot, add the garlic and ginger, stirring for 2 minutes.
- Add the harder vegetables first, sauteing for 5 minutes, or until soft.
- Add the remaining vegetables and miso, sauteing for 3-4 more minutes on a higher heat.
- Stir in the cashews, soy sauce, miso, salt and pepper and serve.
- *For even faster preparation, either chop the vegetables and refrigerate ahead of time, or use a frozen pre-cut option.
