Known as a cruciferous vegetable, it’s filled with disease- fighting antioxidants, vital nutrients, and plenty of fibre. This hearty vegetable creates a dish that delights even the pickiest of eaters.
Crunchy Coleslaw

Serves: 4-6
Salad Ingredients:
- 2 cups thinly sliced white cabbage
- 2 cups thinly sliced red cabbage
- 1 medium grated carrot
- 2 tsp caraway seeds
- 2 tbsp chopped parsley
- 1 cup mandarin slices (optional, but adds a pop of juicy sweetness)
Dressing Ingredients:
- 2 tbsp Dijon mustard
- 1/4 cup apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1 tsp freshly squeezed lemon juice
- pinch of sea salt
- freshly ground black pepper
Make It:
- Add all of the salad ingredients into a large bowl.
- Prepare the dressing by whisking the dressing ingredients together in a bowl, or by placing the dressing ingredients into a jar with a tight-fitting lid and shaking vigorously.
- Pour the dressing over the salad.
- Toss well to combine.
- Season with additional salt and pepper, to taste & Enjoy!
*Resident Foodie Tip:
This salad tastes even better after a day or two in the refrigerator. The dressing softens the cabbage perfectly, without making it wilt or lose taste.
