Keto (ish) Granola

Snack or breakfast?

When you’re seeking out healthy snacking options with a crunch, oatmeal can be just the thing. In the current climate of conscious sugar consumption, Keto recipes are everywhere. While I think granola is not granola without oats, there is a way to modify this granola to make it keto-friendly. You get to choose!

Ingredients:

  • ½ cup sliced almonds lightly toasted

  • ¼ cup pecans

  • ⅓ cup sunflower seeds, lightly toasted

  • ½ cup raw pumpkin seeds, lightly toasted

  • ¼ cup flax seeds

  • ½ cup sesame seeds, lightly toasted

  • 5 tblsp monk fruit sweetener, like Whole Earth

  • ½ tsp cinnamon

  • 2 egg whites

  • Sprinkle of Himalayan pink salt

  • *1 cup oats

  • *1 cup kamut puffs

Make it:

  • Preheat oven to 250 degrees. Line a rimmed baking sheet with parchment paper.

  • Combine almonds, pecans, sunflower seeds, pumpkin seeds, flax seeds, oats, and kamut puffs in a large mixing bowl.

  • Lightly toast sesame seeds over medium-low head for 5 minutes, or until they turn lightly golden. Watch closely!

  • Add sesame seeds, monk fruit sweetener and cinnamon to a food processor and pulse a few times until the mixture turns to powder.

  • Add sesame sugar to the nut mix and combine.

  • Beat eggs whites until they develop peaks. Gently fold into the granola mixture until combined. (If you want a little extra sweetness and aren’t concerned about sugar, add several tablespoons of maple syrup at this stage).

  • Spread granola onto prepared pan evenly and sprinkle salt over.

  • Bake for 45 minutes, until the mixture hardens. Set a timer for 15 minute increments to keep an eye on their progress. Once baked, allow to fully cool.

  • Transfer granola to an air-tight, glass container or individual mason jars to store for a week in the pantry, 2 weeks in the fridge, or the freezer for 2 months.

Keto Modification:

  • Simply remove the oats and granola and increase the almonds, pecans and pumpkin seeds by half.
