I love the juicy sweetness of mangoes.
Whether they’re freshly sliced, blended frozen into a smoothie, or grilled on the BBQ, it’s all good! I’ve even made salads with chunks of mango tossed in with greens and a simple oil and vinegar.
But what would a salad taste like drizzled with a mango vinaigrette? Delicious! Try it yourself and let me know what you think.
Mango Vinaigrette
Ingredients:
- 1 whole mango
- 1/4 cup raw apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1 tsp honey
- 1 tbsp fresh basil (chopped)
- 1/2 tsp lemon or lime juice
Make it:
- Toss all the ingredients into a high-speed blender
- Pour over your favourite salad combination.
*Keeps well in refrigerator for up to 5 days. Shake well before serving. Enjoy!
