For many, breakfast is an afterthought and it’s a mad dash to get out the door. If this is you, imagine how you would feel if you allowed yourself a little more time in the morning to nourish the body that’s going to carry you through your day.
Have a big day ahead? The protein and fibre in my warm Quinoa-Chia Oatmeal will get you started right.
Quinoa-Chia Oatmeal
Total Time: 15 minutes
Serves: 1
Ingredients:
- 1 ½ tablespoons steel cut oats
- 1 ½ tablespoons uncooked quinoa
- 1 ½ tablespoons chia seeds
- 1 tablespoon milled flaxseed
- ½ or ¼ teaspoon cinnamon
- â…“ cup water
- ¼ cup coconut almond milk
- Frozen Berries or banana slices
- Handful of sliced almonds or walnut pieces
- Maple syrup, honey, or monk fruit sweetener
Make it:
- Combine dry ingredients in a small saucepan.
- Add water and bring to a boil. Simmer on low for 10 minutes, stirring occasionally and adding almond milk as the dry ingredients expand.
- Add frozen berries until warm.
- Pour into a dish and add banana slices and top with almonds or walnuts.
- Drizzle with maple syrup or honey to taste.
- Go out and seize the day!
