Delight Your Tastebuds
When peaches are in season, peach crisp is the perfect light dessert. When they’re not in season, flash frozen peaches are a great option.
Peaches are filled with vitamins A and C, beta-carotene, lutein, zea-xanthin, and potassium. They are wonderful supporters of heart, skin, and eye health. And they taste delicious! Try this dessert at your next get-together.
Peach Crisp
Ingredients:
- 6 peaches, peeled and chopped into cubes
- 2 tbsp raw sugar
- 1 tbsp ground chia seeds
- 1 tbsp grated ginger
- 1/2 cup ground almonds
- 1/4 cup sliced almonds
- 1 cup rolled oats
- 1/4 cup sliced dried coconut
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 1/2 tsp sea salt
Make it:
- Preheat oven to 350 degrees.
- Grease a 9×9″ baking dish with coconut oil. Evenly place peaches, raw sugar, chia seeds, and ginger in the dish.
- In a medium mixing bowl, combine the ground almonds, sliced almonds, rolled oats, and dried coconut.
- Pour in the melted coconut oil and maple syrup.
- Add sea salt and stir.
- Sprinkle on top of the peaches to cover completely.
- Bake for 35-40 minutes, or until the top is a golden color. Once slightly cooled, serve and enjoy!
*Vanilla coconut ice cream or cultured coconut is a delicious pairing to this dessert.
