Get your greens
There are so many greens to choose from: Spinach, mesclun mix, kale, cabbage. This salad is very quick to prepare and doesn’t involve too much chopping, but it’s very flavorful and a great addition to lunch or dinner.
Ingredients:
- 2 cups swiss chard/baby spinach mix
- 1/4 cup grape tomatoes
- 1/4 cup sliced cucumber
- baked wild pacific salmon fillet (cold)
- 1 tbsp raw almonds
- 1 tbsp raw sunflower seeds
Dressing:
- 2 tbsp extra virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 1/8 tsp dried basil flakes
- pinch of salt
Make it:
- Combine & whisk dressing ingredients
- toss with greens & serve.
